What can I use to monitor and log incoming/outgoing traffic to/from remote hosts?

I run a web server (Debian Squeeze on a VPS), and the graphs provided by the hosting company show consistently that around twice as much traffic is incoming to the server compared to the outgoing traffic. I am a little confused by this, so I would like to run some kind of logging utility on the machine that will not only confirm the upload/download figures, but also split them up by the remote host involved, so I can see if a large proportion of the incoming traffic is from one particular source.

How do I tail a log file and keep tailing it when the latest one changes date?

I have a directory with log files and I’m putting
logs from script launched by users into them. Logging with syslog doesn’t seem
possible in this case. (non-daemon rsync)

I am experimenting with aircrack-ng and I managed to fill up / with the syslog file complaining about what I’m doing to the poor wifi card. How can I disable logging to syslog for the duration of my Bash session?. Of course I would like other, unrelated, processes to continue their logging as necessary.

I’ve been assigned to lock down all /var/log files so that they cannot be read except by the root user. I’ve been stumped by the /var/log/boot.log file. It seems that after every boot the file no matter what what previous permission state gets set to 644 permissions.

I’m trying to see how many times foo bar appears in /var/log/foo.log within an arbitrary amount of time on a remote server, but nothing that I’ve tried so far has worked.

Is there some way I can check which of my processes the kernel has killed? Sometimes I log onto my server and find that something that should’ve run all night just stopped 8 hours in and I’m unsure if it’s the applications doing or the kernels.

How do I change the sshd logging file location on CentOS? sshd logs to /var/log/messages instead of /var/log/secure. How can I change the setting so sshd will stop sending logs to /var/log/messages?
